Method

Let’s make it

Prep
30 mins
Proofing
~1¾–2½ hours
Bake
~35 mins
  1. Make the dough

In a large bowl, combine the flour, warm milk, softened butter, sugar, sour cream, eggs, yeast, salt and vanilla. Mix everything together, then knead by hand until the dough is smooth and uniform. Add the golden raisins toward the end and knead just until evenly distributed.

  2. First rise

Cover the bowl and let the dough rise until doubled in size, about 1–1½ hours.

    ~1–1½ hours rising
  3. Divide the dough

Gently transfer the risen dough onto your work surface. Try not to press out too much air. Weigh the entire dough, then divide it into 4 equal pieces. My dough weighed exactly 1400 g, so each piece was 350 g.

  4. Shape

Shape each piece into a smooth round bun and arrange the 4 buns in an 11-inch / 28 cm round pan, leaving a little space between them.

  5. Second rise

Cover and let the buns rise again until well puffed and almost doubled in size, about 45–60 minutes.

    ~45–60 mins rising
  6. Brush and bake

Preheat the oven to 350°F / 175°C. Mix 1 egg with 1 tsp heavy cream and gently brush the tops. Bake for about 35 minutes, until deeply golden and baked through.

    ~35 mins baking
  7. Finish

If using the syrup, combine the sugar and water and cook briefly until the sugar dissolves. Brush the hot buns with the syrup as soon as they come out of the oven. The syrup is optional, but it gives the buns a soft, glossy bakery-style finish.

Why this one stays with me

Some recipes bring back a whole time and place.

This raisin brioche takes me straight back to childhood. Our mothers and grandmothers made these soft, rich buns for Shavuot. Filled with golden raisins, they were always part of the holiday table.

I wanted to bring that memory back, so I recreated the old familiar recipe I grew up with, keeping it simple and close to the way I remember it.

There is something very special about making a recipe you have known all your life and seeing it come back to life in your own kitchen.
