Make the dough
Mix the flour, yeast, sugar and salt. Add the lukewarm water and oil and knead for about 8–10 minutes, until smooth and soft. Cover and let rise until doubled and puffy.
Until doubled risingCook the filling
While the dough rises, cook the onion in a little oil until soft. Add the ground beef and cook, breaking it into small pieces. Stir in the garlic, tomato paste, salt, sweet paprika, black pepper and oregano. Cook for another minute or two. If using leftover cooked rice, stir a little in near the end. Let the filling cool. The filling can be made a day ahead; let it lose its refrigerator chill before filling the buns so it does not slow the second rise.
Fill and shape
Gently divide the dough into about 21 pieces, roughly 83–85 g each. Orit likes to cut it with scissors to avoid pulling and pressing. Flatten each piece, add a spoonful of filling, pinch closed and place seam-side down on a lined baking sheet.
Rise again
Let the buns rise until puffy, about 30–40 minutes. Brush with beaten egg and sprinkle with sesame seeds or everything bagel seasoning, if using.
30–40 min risingBake
Bake at 375°F for about 25–30 minutes, until golden brown.
